Mung Beans for Sprouting
AKA moong, green gram and maash, Mung Beans are a legume and are probably the most popular beans for sprouting. With their distinctive appearance and taste, they are perfect for salads, sandwiches and stir-fries. With minimal effort you can quickly grow delicious, crunchy sprouts rich in potassium, magnesium and fibre.

Sprouting Mung Beans
Two tablespoons of mung beans are all you need to fill one 900ml (32oz) mason-style jar in a few days. For best results use a perforated sprouting-jar lid.
1. Rinse. Thoroughly rinse your measured beans in cold water.
2. Soak. In a sprouting jar, cover your beans with water and leave to soak overnight or for 8-12 hours.
3. Drain. Remove the water and then briefly rinse and re-drain the seeds once.
4. Rinse, Drain, Repeat. Twice daily, repeat the rinse and drain process – between rinses place your sprouting jar lid down, in a position out of direct sunlight.
5. Harvest. In 3-4 days your sprouts will be ready to eat. Rinse a final time and enjoy!
