Milling Wheat
Our Lancashire Milling Wheat for bread making is a spring wheat usually sown in March and harvested in September. Its shorter growing season gives lower yields per hectare and consequently a higher protein (gluten) content. This makes the Spring wheat varieties we grow at Brow Farm more suitable for bread flours.
Grown on the fertile farmland of West Lancashire, the wheat is dried after harvesting to a moisture content of 14%. It is cleaned so that dust is removed and the wheat is sifted. The whole wheat grains are then packed in bags ready to be shipped.
